Yesterday marked the first official day of fall, and you can definitely feel the shift—there’s a sense that the holiday season is just around the corner. This week’s meal plan is all about cozy fall vibes, with recipes that bring warmth and comfort as we ease into the season. As always, I’m here for any questions or substitutions—just leave a comment, and we’ll figure it out together!
Don’t forget to see below on how to create your grocery list.
BREAKFAST
Who needs Starbucks when you can make your own pumpkin spice latte at home? This version is not only nourishing, but also so much tastier than the syrup-filled alternative!
The BEST Copycat Starbucks Pumpkin Loaf
If you’re looking for a healthier alternative to the classic Starbucks pumpkin loaf, then look no further because this is it! I love enjoying it while sipping my PSL, topped with Greek yogurt and served with a side of eggs to keep things balanced.
This version of the viral pesto eggs is easy and flavorful. The addition of feta gives it an extra layer of saltiness and tang. Serve on toast with a side of greens for a high protein savory breakfast.
LUNCH
This Greek Chickpea Salad comes together in 15 minutes making a quick and easy lunch or light dinner- I add chicken for extra protein.
Egg salad is so nostalgic and easy to prep ahead of time! I love making a batch and switching up between making it a sandwich and salad.
Mediterranean Lentil & Grain Bowls
Don’t feel like you have to follow this recipe exactly—it’s the perfect inspiration for making your own based on what’s in your kitchen and your personal tastes. Choose your grain (brown rice, quinoa, etc.), add lentils if you love them, grab some pickled onions (store-bought or homemade), and feel free to use store-bought hummus. I like to pack in more protein, so I often top mine with grilled chicken to make it extra satisfying.
DINNER
This nourishing Chicken Pot Pie is the perfect warm and comforting meal on a cold night. The crust is gluten-free and made with almond and tapioca flour.
Crockpot Mediterranean White Chicken Chili
It's officially crockpot season—hallelujah! That means quick, easy meals you can throw together, set, and forget, making weeknight dinners a breeze.
This is the perfect easy weeknight dinner that the whole family will love. You can use a taco seasoning packet if you want to simplify the cooking process, I love Siete’s mild taco seasoning.
SNACKS / DESSERT
Gluten-Free Pumpkin Coffee Cake
Cinnamon Apples w/ nut butter
I love slicing up an apple, dusting it with cinnamon and dipping it in cashew butter for a delicious snack. I’ve also been loving these baked apple chips.
A note on grocery lists: I originally thought that I’d make a grocery list for you based on all the recipes I shared for the week. Then, I realized it probably wouldn’t be that helpful because I could never account for all the changes you might need to make. (Ex. only needing three dinners, you don’t like one of the recipes, you have more mouths to feed, you don’t need as many servings, etc). So instead I’m giving you a resource for making a grocery list based on the recipes you want to add to your weekly plan in seconds.
Here’s how:
Click this link.
Use this prompt:
“Create a grocery list for me using the recipe links below. Make sure to combine ingredients that are the same. Ex. if one recipes calls for 1 cup almond milk and another calls for 1/2 cup. The grocery list should read 1 1/2 cups almond milk.”—Don’t forget to add the links BEFORE hitting enter.
Do a quick review to see if its like everything is there.
Copy and paste to your notes app. Add any other groceries (don’t forget snacks or other essentials) you need for the week.
Let me know if you like this format or if you have other suggestions. I’m all ears. And don’t be shy. If you have a questions, need a product recommendation or substitution, leave a comment below.
